Luncheon Salad - cooking recipe

Ingredients
    2 qt. coarsely cut-up turkey or chicken white meat
    20 oz. can water chestnuts
    2 lb. seedless grapes
    2 c. diced celery
    1 (13 oz.) can pineapple chunks
    3 c. mayonnaise
    1 Tbsp. curry powder
    1 Tbsp. soy sauce
    1 Tbsp. lemon juice
    1/2 head lettuce, shredded
    2 or 3 c. toasted, slivered almonds
    1 large can litchi nuts
Preparation
    Combine all ingredients except lettuce, litchi nuts and almonds.
    Line a large clear bowl with lettuce (or make up individual bowls).
    Spoon salad ingredients over lettuce and top with almonds and lithci nuts.
    Serves 12.
    Makes a very large salad to serve a group.
