Zucchini Bread - cooking recipe

Ingredients
    1 c. oil
    2 c. sugar
    2 tsp. vanilla
    3 tsp. cinnamon
    1 c. coconut
    3 eggs, slightly beaten
    2 c. zucchini (raw), grated
    3 c. self-rising flour
    1 c. chopped nuts
Preparation
    Combine oil, eggs, sugar, zucchini and vanilla.
    Blend well. Stir in flour and spice.
    Do not beat.
    Stir in nuts and coconut. Spoon batter in 2 well-greased loaf pans.
    Bake at 325\u00b0 for 1 1/2 hours or until done (ovens vary so keep track after 1 hour).
