Zucchini-Apple Bread - cooking recipe

Ingredients
    4 c. all-purpose flour
    1 Tbsp. baking soda
    1/4 tsp. baking powder
    1 1/2 tsp. salt
    1 1/2 Tbsp. ground cinnamon
    1/2 tsp. ground nutmeg
    5 eggs
    2 c. sugar
    1 c. firmly packed brown sugar
    1 1/2 c. vegetable oil
    1 Tbsp. vanilla extract
    2 c. shredded zucchini (about 3 medium)
    1 c. shredded apple (about 1 medium)
    1 1/2 c. chopped pecans
Preparation
    Combine first 6 ingredients; set aside.
    Combine eggs, sugars, oil and vanilla in a large bowl; beat at medium speed of an electric mixer until well blended.
    Stir in zucchini, apple and pecans.
    Add dry ingredients, stirring just until moistened. Spoon batter into 3 greased and floured 8 1/4 x 4 1/2 x 3-inch loaf pans.
    Bake at 350\u00b0 for 50 to 55 minutes or until a wooden pick inserted in center comes out clean.
    Cool in pans 10 minutes; remove to wire rack and cool completely.
    Yield:
    3 loaves.
