Fresh Apple Spice Cake - cooking recipe

1 c. vegetable oil
2 c. sugar
3 eggs
3 c. all-purpose flour
1 tsp. soda
1/4 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla
1 c. chopped pecans
3 c. peeled, finely chopped apples

Preparation

Combine oil and sugar; beat well.
Add eggs, one at a time, beating well after each addition.
Combine flour, soda, salt, cinnamon and nutmeg.
Stir.
Add dry ingredients to sugar mixture, beating well.
Stir in pecans and apples.
Pour batter into a greased and floured 10-inch tube pan.
Bake at 350\u00b0 for 1 hour and 15 minutes.
Using a toothpick, punch holes in cake while hot. Spoon glaze over cake.
Cool; remove from pan.
Yields one 10-inch cake.
