Date Peanut Loaf - cooking recipe

Ingredients
    2 c. chopped, pitted dates
    1 tsp. soda
    1 c. boiling water
    1 c. firmly packed brown sugar
    2 Tbsp. shortening
    1/4 tsp. salt
    1 egg
    3/4 c. chopped peanuts
    1 1/2 c. all-purpose flour
Preparation
    Place
    dates
    in small bowl;
    sprinkle soda over dates. Cover with boiling water and set aside.
    Cream brown sugar and shortening in
    larger
    bowl.
    Add
    salt and egg, beating well. Add peanuts and date mixture to this, mixing in well.
    Stir in flour. Spoon into\ta

    x 5 x 3-inch loaf pan.
    Bake at 325\u00b0 for 1
    hour or until done.
    Yields 1 loaf.
    (If salted peanuts are used, omit the salt in the recipe.)
