Heavenly Rice Pudding - cooking recipe

Ingredients
    1 1/2 c. cold cooked rice
    1 1/2 c. small marshmallows
    1/2 c. crushed pineapple, well drained
    1/4 c. chopped maraschino cherries, drained
    1/4 c. chopped pecans
    2/3 c. evaporated milk
    2 Tbsp. lemon juice
    1/2 c. confectioners sugar, sifted
Preparation
    Mix rice, marshmallows, pineapple, cherries and nuts in a bowl.
    Chill the evaporated milk in freezer tray until soft ice forms around edges (about 15 or 20 minutes).
    Then whip it until stiff, 1 minute.
    Add lemon juice; whip 2 more minutes until very stiff.
    Beat in sugar.
    Fold into rice mixture.
    Spoon into serving dishes.
    Makes 6 servings.
