Beef Stroganoff - cooking recipe
Ingredients

1 lb. fillet of beef, cut in julienne strips (round steak or sirloin can be used)
1 Tbsp. sweet paprika
salt and fresh ground pepper to taste
2 Tbsp. butter
1/2 c. finely chopped onion
1/2 c. dry white wine
1 c. sour cream
1/2 c. sour pickles (cornichons), cut into thin strips (optional)
Preparation

Sprinkle meat with paprika, salt and pepper.
Heat the butter in a very hot skillet.
Add meat, stirring to separate the pieces to cook evenly, about 2 to 3 minutes.
Remove the meat with slotted spoon.
Add onion; saute for 1 minute.
Add the wine; cook down to reduce by half.
Lower the heat.
Add the sour cream, stirring (do not allow cream to boil, or it will curdle).
Return meat to pan.
Serve with noodles.
