Aunt Eileen'S German Potato Soup - cooking recipe

Ingredients
    12 large potatoes, peeled and cut into 1-inch cubes
    2 large onions, chopped
    2 lb. hot sausage
    1 qt. half and half
    parsley
Preparation
    Place potatoes and onions into large pot, adding just enough water to cover.
    Bring to a boil, reduce heat and simmer until tender.
    Do not drain.
    Hand mash half of the potato mixture in the pot.
    Salt and pepper to taste.
    While soup is simmering, cook sausage until crisp.
    Drain well and add to soup.
    Add half and half and fresh chopped parsley.
