Pineapple Congealed Salad - cooking recipe
Ingredients

1 large can pineapple, drained (save juice)
1 c. sugar
2 Tbsp. lemon juice or juice of 1 lemon
2 pkg. plain gelatin (1/2 c.)
16 oz. cottage cheese
1 large Cool Whip
1 1/2 c. chopped nuts
1/2 c. cherries, chopped
Preparation

Mix gelatin with just enough pineapple to dissolve gelatin. Mix sugar and lemon juice and remaining pineapple juice and heat until hot.
Do not boil.
Pour gelatin mixture into hot mixture. Place in refrigerator to cool.
When cool fold in cottage cheese, Cool Whip, nuts and cherries.
(Strawberries can be used.)
Mix well and refrigerate overnight.
