Vegetable Medley - cooking recipe
Ingredients

2 c. fresh broccoli
2 c. fresh cauliflower
1 c. sliced carrots
10 to 15 cherry tomatoes
1 c. fresh mushrooms
1 jar artichokes
1/2 c. green olives, sliced
1/2 c. black olives, sliced
2 large avocados
1 large red onion or a bunch of green onions
1 large bottle Italian dressing
Preparation

Cut vegetables in bite-size pieces. Place all vegetables, except avocados, in a large mixing or storage bowl. Cover vegetables with Italian dressing and refrigerate for at least 4 to 8 hours (can make in the morning to serve at dinner).
Stir vegetables to mix dressing. Place in serving bowl and add bite-sized pieces of avocado and serve.
