Eggplant Casserole - cooking recipe

Ingredients
    1 c. cooked eggplant, drained
    1 c. grated cheese (sharp)
    3 c. corn flakes
    2 hard-boiled eggs, chopped
    2 Tbsp. butter
    salt and pepper to taste
    1 small bell pepper, chopped (optional)
Preparation
    Crush corn flakes and mix with other ingredients.
    Put in greased baking dish and bake until cheese is melted and casserole is heated thoroughly.
    Top with grated cheese.
    Serves 6.
