Duck In Mushroom Sauce(Serves 6. Preparation Time: 3 Hours.) - cooking recipe

Ingredients
    2 to 3 lb. wild duck
    2 cans cream of mushroom soup
    1 c. red wine
    1 small onion, chopped
    4 carrots, grated
    2 celery stalks, chopped
    salt and pepper
    parsley for garnish
Preparation
    Combine soup, red wine and chopped onion in a roasting pan. Wash duck and stuff with carrots and celery.
    Place duck in roasting pan and cover with sauce.
    Cover with aluminum foil and roast in a 325\u00b0 oven for 1 1/2 to 2 hours.
    Garnish with parsley and serve over rice.
