Sweet And Sour Chicken - cooking recipe

Ingredients
    1 lb. boneless chicken breasts, cut in strips
    2 Tbsp. oil
    1/2 c. green pepper strips
    1/2 c. red pepper strips
    1 c. carrot strips
    1 clove garlic, crushed
    1 Tbsp. cornstarch
    1/4 c. soy sauce
    1 (8 oz.) can pineapple in juice
    3 Tbsp. vinegar
    3 Tbsp. brown sugar
    1/2 tsp. ground ginger
    1 1/2 c. Minute or long grain rice
Preparation
    Brown chicken in hot oil in large skillet.
    Add peppers and carrot; cook and stir for 2 minutes.
    Mix cornstarch with soy sauce; add to pan with pineapple, juice, vinegar, brown sugar and ginger.
    Bring to a boil for 1 minute.
    Add chicken and cook for 20 minutes.
    Serve over rice.
