Low Sodium Garlic Chicken - cooking recipe

Ingredients
    3 Tbsp. Mazola corn oil
    1 lb. skinless, boneless chicken breasts, cut into 1/2-inch pieces
    4 garlic cloves, minced
    1 lb. large red bell peppers, cut into 1/2-inch pieces
    4 oz. snow peas, cut into 1/2-inch pieces
    1/4 c. green onions, sliced
    1/2 c. low-fat reduced sodium chicken broth
    1 Tbsp. light soy sauce
    1 Tbsp. Argo or Kingsford's cornstarch
    1/2 tsp. ground ginger
    3 c. cooked rice (without salt)
Preparation
    In large skillet, heat 2 tablespoons corn oil over medium-high heat.
    Add chicken and garlic.
    Saute 3 minutes or until chicken turns white.
    Add remaining 1 tablespoon corn oil, red pepper, snow peas and green onions; saute 1 minute.
    In a small bowl, stir chicken broth, soy sauce, cornstarch and ginger until smooth.
    Add chicken mixture.
    Stirring constantly, bring to boil over medium heat and boil 1 minute.
    Serve over rice.
    Serves 6.
