Ingredients

2 c. sugar
1 tsp. whole allspice
1 1/2 tsp. salt
3 1/2 c. vinegar
1 1/2 c. water
3 qt. peeled small beets
2 cinnamon sticks
Preparation

Wash, drain and leave a 2-inch stem on beets. Cover with boiling water. Cook until tender. Peel. Combine all ingredients except for beets. Simmer 15 minutes.
