Carbonade Of Beef - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. oil
    3 lb. chuck or rump of beef, cut into slices 1/2 inch thick
    1 1/2 lb. yellow onions, thinly sliced
    salt and pepper to taste
    2 cloves garlic, crushed
    1 bottle beer
    1 c. beef stock
    1 Tbsp. brown sugar
    bay leaf
    thyme
    parsley
    2 Tbsp. cornstarch
    2 Tbsp. vinegar
Preparation
    Heat butter and oil to sizzling.
    Brown the beef.
    Reduce heat and brown onions.
    Season with salt and pepper and stir in the garlic.
    Layer the beef and onions in a casserole.
    Pour in beer and stock.
    Stir in the sugar.
    Add the bouquet garni.
