Zucchini Bread - cooking recipe

Ingredients
    2 c. peeled and grated zucchini squash
    1 c. dates, chopped or 1 c. raisins
    3 eggs
    1 c. vegetable oil
    2 tsp. vanilla
    3 c. flour
    1 tsp. soda
    1/2 tsp. baking powder
    3 tsp. cinnamon
    1 c. chopped nuts
    1 tsp. salt
Preparation
    If raisins are used, pour a cup of boiling water over raisins. Let stand until raisins are plump, drain and use mix according to list.
    Bake in 350\u00b0 oven until done, approximately 1 hour.
