Chicken Strata - cooking recipe

Ingredients
    8 slices whole wheat bread
    2 c. skinned, cooked and cubed chicken
    1/2 c. onion, finely chopped
    2/3 c. celery, finely chopped
    4 oz. can diced green chilies (optional)
    1/2 c. reduced fat mayonnaise
    1/2 tsp. salt
    1/4 tsp. pepper
    3 corn tortillas
    3 eggs, slightly beaten
    1 3/4 c. 2% low-fat milk
    1 c. low-fat cottage cheese
    10 3/4 oz. can condensed cream of mushroom soup
Preparation
    Cut the bread into 1-inch cubes and place on the bottom of a 12 x 18-inch nonstick pan.
    Combine the chicken, onion, celery, chilies, mayonnaise, salt and pepper in a medium bowl; spoon over bread cubes.
    Tear the tortillas into bite size pieces and place on top of the chicken mixture.
    Combine the eggs, milk, cottage cheese and soup; pour over the top.
    Cover and refrigerate overnight to allow the flavors to blend.
