Frittata With Broccoli And Potatoes - cooking recipe

Ingredients
    3 medium-large finely diced potatoes
    1 Tbsp. canola oil
    10 oz. chopped broccoli
    1/2 c. coarsely chopped mushrooms
    1/4 c. chopped onion
    8 egg whites, slightly beaten
    1/4 c. grated Parmesan cheese
    1 tsp. dried parsley flakes
    1/4 tsp. dried basil
    1/4 tsp. oregano
    1/4 tsp. black pepper
    1/2 tsp. paprika
Preparation
    Preheat oven to 350\u00b0.
    In oven type broilerproof skillet, cook potatoes in canola oil over medium heat, stirring occasionally for about 10 minutes until tender and slightly browned.
    Add broccoli, mushrooms and onion and cook another 5 minutes.
    Stir occasionally.
