Orange Meringue Rice Pudding - cooking recipe

Ingredients
    2 c. milk
    1/3 c. long grain rice
    2 beaten egg yolks
    2 Tbsp. vanilla
    dash of salt
    2 egg whites
    3 Tbsp. sugar
    orange marmalade
Preparation
    In heavy saucepan, combine milk and rice.
    Bring to boiling. Reduce heat, cover and cook over low heat, about 15 minutes or until rice is tender.
    Remove from heat.
    Gradually stir in 1 cup of hot rice mixture into beaten egg yolk.
    Return all to saucepan. Stir in orange marmalade to taste, vanilla and salt.
    Pour rice mixture into 8 x 6 1/2 x 2-inch baking dish.
    Bake, uncovered, in a 350\u00b0 oven for 12 minutes.
    Remove from oven, stir rice mixture well.
