Ingredients

1/2 c. brown sugar
1/2 c. white sugar
1 c. grated zucchini
1/2 c. salad oil
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. coconut
Preparation

In mixing bowl, beat together sugars, zucchini, oil and vanilla.
Sift
together dry ingredients.
Add the 2 together; stir until smooth.
Blend
in
coconut.
Drop
by spoonfuls on greased cookie sheet.
Bake
at
350\u00b0
for
12
to 15 minutes. Makes 3 or 4 dozen soft cookies.
