Shrimp Newburg - cooking recipe

Ingredients
    1 1/2 lb. (approximately) cooked, peeled shrimp
    1/2 c. butter
    4 Tbsp. flour
    1 Tbsp. salt
    dash of cayenne
    dash of nutmeg
    1 pt. half and half cream
    4 egg yolks, beaten
Preparation
    Cut
    shrimp
    in
    half.
    Melt butter and blend in flour. Add seasonings.
    Add cream gradually and cook until thick and smooth. Stir
    constantly.
    Beat
    egg yolks; stir a little hot sauce
    into egg
    yolks.
    Add
    egg
    mixture into remaining hot sauce.
    Add shrimp
    and heat through.
    Do not boil or it will curdle.
    Remove from heat and stir in sherry.
    Serve over rice or puff pastry shells.
