Squash Muffins - cooking recipe

Ingredients
    2 lb. squash (8 medium)
    2 eggs
    1 c. butter, melted
    1 c. sugar
    3 c. all-purpose flour
    1 Tbsp. and 2 tsp. baking powder
    1 tsp. salt
Preparation
    Cut and wash squash.
    Cook squash in water for 15 to 20 minutes.
    Drain well and mash.
    Measure 2 cups and combine squash, eggs and butter and stir well.
    Set this aside.
    Combine remaining ingredients
    in a large bowl and make a well in the center.
    Add squash mixture, stirring just until moistened.
    Spoon into greased muffin pan 3/4 full.
    Bake at 375\u00b0 for 20 minutes.
