Shrimp, Feta And Tomato Salad - cooking recipe

Ingredients
    6 Tbsp. olive oil
    1 1/2 lb. small shrimp, cleaned
    2 Tbsp. lemon juice
    1 tsp. white wine vinegar
    1/4 tsp. grated lemon zest
    1 Tbsp. oregano leaves
    6 oz. Feta
    3 tomatoes, chopped
    1 c. sliced celery, green pepper or cucumber (optional)
    1 c. cured olives, slivered
Preparation
    In large heavy skillet, heat 2 tablespoons of oil over moderate heat.
    Saute shrimp for 2 minutes; stir until firm. Transfer to large bowl; let cool.
    In small bowl, whisk the lemon juice, vinegar, zest, oregano, salt and pepper.
    Whisk 4 tablespoons of oil.
    Toss shrimp, Feta, tomatoes and olives. Chill.
    Serves 4.
