Eggplant Casserole - cooking recipe
Ingredients

1 eggplant
1 (1 lb.) can tomatoes, diced
1 medium onion, chopped
shredded Cheddar cheese (about 1/2 c.)
salt and pepper
Preparation

Peel and boil eggplant in salted water for 5 to 10 minutes. Mash.
Add salt and pepper to taste, tomatoes, chopped onion and shredded cheese.
(Reserve enough to sprinkle on top.)
Stir and put in greased casserole dish.
Bake about 30 minutes in 350\u00b0 oven.
Top with reserved cheese and heat to melt.
