Zucchini-Eggplant Bake - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1/2 sweet red pepper, sliced thin
    1/2 green pepper, sliced thin
    1 medium onion, sliced thin
    2 medium zucchini, sliced
    1 eggplant, halved and sliced thin
    salt and pepper
    2 tomatoes, sliced
    Parmesan cheese
    flavored bread crumbs
Preparation
    Saute onion, peppers, eggplant, garlic, salt and pepper in 1/2 olive oil.
    Place in baking dish.
    Arrange zucchini and sliced tomato on top.
    Sprinkle remaining 1/2 olive oil, salt and pepper. Bake with cheese and flavored bread crumbs on top in 350\u00b0 oven for 45 minutes.
