Swedish Meatballs With Rice - cooking recipe

Ingredients
    2 (10 oz.) cans cream of celery soup
    1 lb. ground beef
    2/3 c. fine dry bread crumbs
    1 egg, slightly beaten
    2 Tbsp. onion, minced
    1 Tbsp. parsley, chopped (optional)
    1 tsp. salt
    rice
Preparation
    Blend soup with 1 can water.
    Measure out 1/4 cup mixture and combine with remaining ingredients.
    Shape into 1-inch balls. Brown in large skillet in 1 tablespoon shortening.
    Add remaining soup mixture.
    Cover and cook over low heat for about 20 minutes. Stir occasionally.
    Serve over hot cooked rice.
