Mama'S Summer Tomato Pie - cooking recipe
Ingredients

1 9 in. pie shell, unbaked
2 c. tomatoes, peeled, seeded and chopped
1/4 tsp. salt
1 tsp. fresh basil, cut in thin strips
1/4 tsp. lemon pepper
1 (4 oz.) pkg. Ukrops shredded Cheddar cheese
1/2 c. fat-free or regular mayonnaise
1 oz. Parmesan cheese, grated
Preparation

Bake empty pie shell at 350\u00b0 for 5 - 6 minutes, do not brown. Combine tomatoes, salt, basil, lemon pepper, and place in pie shell.
Mix Cheddar cheese and mayonnaise and spoon over tomatoes. Sprinkle with Parmesan cheese.
Bake at 350\u00b0 for 30 minutes.
