Zucchini Caviar - cooking recipe
Ingredients

4 c. zucchini, sliced (raw)
1 medium onion (raw)
1 medium garlic clove, crushed
1/4 tsp. dill weed
1/4 tsp. thyme leaves
2 Tbsp. canola oil
2 medium tomatoes (raw)
1 tsp. Worcestershire sauce
2 Tbsp. lemon peel
2 tsp. lemon juice
Preparation

Shred zucchini and finely chop onion; saute with garlic, dill weed, thyme and oil until zucchini is tender.
Remove from heat. Finely chop tomatoes and add with lemon peel and Worcestershire sauce.
Combine with other ingredients.
Refrigerate until chilled.
Stir in lemon juice just before serving.
Serve with crackers.
