Chicken A'La Creole - cooking recipe
Ingredients

1 (3 lb.) fryer, cut in pieces
1 lb. kielbasa sausage, sliced 1/4-inch thick
2 lb. chopped fresh or canned tomatoes
1 Tbsp. crushed dried mint
1 c. dry white wine
2 c. chicken stock or water
3/4 tsp. ground cayenne pepper or 2 tsp. Louisiana hot sauce (to taste)
2 Tbsp. olive oil
2 c. chopped onion
1 c. chopped green onion
1/2 to 3/4 Tbsp. salt
1 c. chopped bell pepper
2 Tbsp. soy sauce
Preparation
-
Rinse the chicken well.
Simmer the chicken to make stock. After the chicken is boiled, remove from stock.
Let cool, then debone and save meat.
