Meat-Potato Quiche - cooking recipe

Ingredients
    3 Tbsp. vegetable oil
    3 c. coarsely shredded raw potatoes
    1 c. grated cheese
    3/4 c. cooked, diced chicken, ham or browned sausage
    1/4 c. chopped onion
    1 c. rich milk (part cream)
    2 eggs
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    In
    a
    9-inch pie pan, stir together vegetable oil and potatoes. Press evenly
    into pie crust shape.
    Bake at 425\u00b0 for 15 minutes, until just beginning to brown.
    Remove from oven.
    Layer on grated cheese and chicken.
    In
    a
    bowl, beat together milk, eggs, salt and pepper.
    Pour egg mixture onto other ingredients. Sprinkle with 1 tablespoon parsley flakes.
    Return
    to oven and bake at 425\u00b0 for 30 minutes, until lightly browned.
    Allow to cool 5 minutes before cutting into wedges.
