Chris' Chicken - cooking recipe

Ingredients
    2 fresh, cut up chickens
    1 onion, diced
    1 red pepper, diced or pimento
    1 can green peas or 1 1/2 c. frozen peas
    3/4 c. olive oil
    3 c. chicken broth or boiling water
    2 c. uncooked rice
    1 green pepper, diced
    3 garlic cloves
    3/4 c. cooking wine
    1/2 to 3/4 c. tomato sauce
    salt
Preparation
    In a large skillet, heat the olive oil and saute the chicken until light brown.
    Add the onion, garlic and peppers.
    Saute, but do not brown.
    Push sauteed vegetables aside.
    Add salt as desired. Add uncooked rice and stir among the chickens.
    Add the chicken broth, tomato sauce, wine and peas and bring to a boil.
    Remove from heat.
    Cover and place in a hot oven at 400\u00b0.
    Bake until dry. Serves 10 to 12.
