Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 1/2 c. grated sharp cheese
    1 1/2 c. cracker crumbs
    1 1/2 c. milk
    4 eggs, slightly beaten
    1 tsp. salt
    1/2 tsp. pepper
    1 stick butter or oleo, melted
Preparation
    Cook eggplant until tender.
    Add all other ingredients except 1/2 cup cheese, 1/2 cup cracker crumbs and a little melted butter. Mix well and put in baking dish.
    Sprinkle with remaining cheese, crumbs and butter mixture.
