Lemon Jello Cake - cooking recipe
Ingredients

1/2 c. fresh lemon juice (about 3 lemons)
2 tsp. grated lemon rind
1 1/2 c. pineapple juice
1/4 c. applesauce
1 1/2 c. powdered sugar
1 pkg. yellow cake mix
8 egg whites
1 small pkg. lemon Jell-O
Preparation

Preheat oven to 350\u00b0.
Coat an 8 1/2 x 11-inch pan with vegetable oil spray.
Simmer pineapple juice until it's reduced to 3/4 cup.
Mix applesauce and egg whites in a large bowl.
Stir in lemon rind, Jell-O and cake mix.
Slowly add pineapple juice; beat for 5 minutes.
Pour into greased pan and bake for 30 to 40 minutes.
Mix lemon juice and powdered sugar and pour over hot cake.
