Ingredients

3/4 c. raisins
1/4 c. orange juice
3/4 c. brown sugar
1 cube butter
2 eggs
1 c. finely shredded carrots
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
Preparation

Soak raisins in orange juice; set aside.
Cream sugar and butter; beat in eggs.
Stir in carrots.
Combine flour, baking powder and baking soda, then all spices and salt.
Add 1/2 of the flour mixture to carrot mixture.
Stir in raisins, then remaining flour and mix well.
Spoon into greased and floured 5-cup mold. Bake at 325\u00b0 for 50 to 60 minutes.
