Roasted Peppers(Peperoni Arrostiti) - cooking recipe

Ingredients
    6 to 8 large red and yellow peppers
    1/2 c. olive oil
    4 cloves garlic, finely chopped
    3 Tbsp. chopped fresh parsley
    salt and pepper to taste
Preparation
    Roast peppers under broiler
    or on outside grill, until skin blisters and chars.
    Place
    peppers
    in paper bag and let sit for 5 minutes.
    Peel peppers and remove seeds.
    Peel under running water, if necessary.
    Cut peppers in long thin strips. Arrange in platter,
    overlapping peppers.
    Sprinkle with olive oil, garlic, parsley, salt and pepper.
    Serve at room temperature with fresh Italian
    bread,
    if
    desired.
    These
    are also great over grilled Italian
    sausage
    (see recipe).
    Makes 8 to 10 servings.
