Souffle Sweet Potatoes - cooking recipe

Ingredients
    6 c. hot cooked sweet potatoes
    3/4 to 1 c. sugar
    1/4 c. butter or margarine
    1/2 tsp. vanilla
    1/4 tsp. nutmeg
    3 eggs
Preparation
    Place sweet potatoes, sugar, butter, vanilla and nutmeg in large mixing bowl; beat until smooth and fluffy.
    Add eggs, one at a time, beating well after each addition.
    Place in souffle dish or 2-quart casserole.
    Bake at 400\u00b0 for 30 minutes.
    Serve while hot.
    Serves 8.
