Sunshine Muffins - cooking recipe
Ingredients

1 egg
1/2 c. milk
1 c. (8 oz. can) crushed pineapple in unsweetened pineapple juice (not drained)
1/4 c. margarine, melted
2 c. sifted flour
4 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
2 Tbsp. sugar
2 tsp. grated orange rind
Preparation

Beat egg and milk.
Stir in pineapple and margarine.
Sift flour, baking powder, salt and 1/4 cup sugar.
Add to pineapple mixture, stirring only until moistened.
Fill greased muffin pans 2/3 full.
Sprinkle with mixture of 2 tablespoons sugar and orange rind.
Bake in a preheated 400\u00b0 oven approximately 25 minutes. Yield:
12 muffins; 155 calories per muffin.
