Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. peeled and grated zucchini
    2 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. salt
    3 tsp. cinnamon
    1/2 c. nuts (optional)
Preparation
    Beat eggs until light and fluffy.
    Add oil, sugar, zucchini and vanilla. Mix lightly but well.
    Separately mix flour, baking soda, baking powder, salt and cinnamon in bowl.
    Blend first mixture in with flour mixture.
    Bake in two (9 x 5-inch) loaf pans at 325\u00b0 for 1 hour or until done (touch test).
