Ratatouille(Mediterranean Vegetable Stew) - cooking recipe

Ingredients
    1 medium eggplant (optional)
    2 medium zucchini, chopped
    1 c. finely chopped green pepper
    1 medium finely chopped onion
    4 medium tomatoes, quartered
    little salad oil
    3 cloves garlic, minced
    salt and pepper to taste
Preparation
    Cook and stir all ingredients until heated through.
    Cover and cook over medium heat, stirring occasionally 15 to 20 minutes.
