Sweet Pickles - cooking recipe
Ingredients

7 lb. cucumbers
6 c. white sugar
1 qt. vinegar
1 Tbsp. cloves
4 Tbsp. cinnamon
Preparation

Use large, over-ripe cucumbers.
Peel and scoop out the seeds. cut into 2 to 3-inch pieces and place in a large cooking pot. Salt the cucumbers liberally and let stand overnight to draw out some of the water.
The next day, pour off the accumulated water and rinse off the cucumbers and leave draining in colander.
Heat vinegar in a large kettle.
Add spices and bring to boiling point. Add the sugar, then add the cucumbers to the liquid and heat thoroughly.
I cooked the cukes until they were just tender enough to remain together when picked up with a fork.
This took practice.
Put in sterilized jars at once and seal.
