Dot'S Fried Rice - cooking recipe

Ingredients
    1 c. parboiled rice, drained
    1/4 c. scallions
    2 eggs
    1/2 c. soy sauce
    1 c. bean sprouts
    1/2 to 1 c. steamed small shrimp
    1/2 to 1 c. shredded chicken (optional)
    1/2 to 1 c. shredded carrots
    1/2 Tbsp. cooking oil
Preparation
    In large skillet, add cooking oil (make sure to cover the entire bottom of skillet).
    Scramble eggs and set aside.
    In same skillet, add scallions.
    Stir, then add rice and stir.
    Add soy sauce to rice and scallions; stir until the rice turns brown from the sauce.
    Add shrimp; cover and cook for about 1 minute, then add sprouts, eggs, chicken and carrots (if you desire chicken and carrots).
    Heat through and serve.
