Walnut Eggplant Parmesan - cooking recipe
Ingredients

1/4 c. olive or canola oil
1 medium eggplant, sliced 1/4 inch thick
1/2 onion, grated
1/2 green pepper, grated
1 carrot, grated
1/4 c. Parmesan
2 cloves garlic, chopped or pressed
1/4 tsp. oregano
1/4 tsp. thyme
1/4 tsp. rosemary
1 (14 1/2 oz.) can Italian-style stewed tomatoes
1 (8 oz.) can tomato sauce
1/2 lb. Mozzarella cheese slices, sliced
Preparation

Heat skillet, add oil and saute the eggplant until brown and soft.
Set aside.
In same skillet combine and simmer all other ingredients except the Mozzarella cheese for 15 minutes.
