Breast Of Chicken With Orange Sauce - cooking recipe
Ingredients

1/2 c. finely chopped onion
1/2 c. grated carrot
1 Tbsp. grated orange rind
2 whole chicken breasts, split and skin removed
1 c. orange juice
1/2 c. dry white wine
orange slices (for garnish)
1/2 c. chicken stock
1 tsp. grated ginger or 1/4 tsp. powdered ginger
2 Tbsp. cornstarch, dissolve in 2 Tbsp. water
Preparation

Place onion, carrot and orange rind in bottom of shallow baking pan.
Arrange chicken breasts on top.
Mix 1/2 cup orange juice and wine.
Pour over chicken.
Cover and bake in 350\u00b0 oven for 45 minutes or until tender.
Remove chicken and keep warm.
In same pan chicken cooked in, combine stock, remaining orange juice, ginger, cornstarch and juices in pan.
Heat until sauce thickens, stirring often.
Pour over chicken.
Garnish.
Serves 4.
