Elderberry Wine - cooking recipe
Ingredients

stemmed, rinsed elderberries
water (just enough to keep berries from burning)
sugar
Preparation

Cook berries and water only a few minutes, just long enough to scald thoroughly.
Let strain through cheesecloth.
Add 8 cups sugar to 10 cups berry juice.
Set in cool place; skim daily until clear.
When bubbles cease to rise on top of liquid, it is ready to bottle.
