Banana Fritters - cooking recipe
Ingredients

3/4 c. flour
3 Tbsp. sugar
1/8 tsp. cinnamon
1/2 tsp. baking powder
2 eggs
1/2 c. milk
3/4 c. mashed banana
1/2 tsp. vanilla
cooking oil
Preparation

In a large bowl, mix flour, sugar, cinnamon and baking powder. In another bowl, beat together eggs, milk, mashed banana and vanilla.
Stir liquid ingredients all at once into flour mixture, stirring until smooth.
Let batter sit for 30 minutes.
Pour oil into large saucepan to half full and heat over medium heat.
Drop batter by tablespoons into hot oil.
Cook 5 minutes or until golden brown.
To serve, sprinkle with powdered sugar.
Makes about 20 fritters.
