Blackened Drum - cooking recipe
Ingredients

1 Tbsp. paprika
2 Tbsp. salt
1 tsp. onion powder
1 1/2 tsp. garlic powder
1 tsp. red pepper
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. thyme
1/2 tsp. oregano
1 Tbsp. parsley, chopped
Preparation

Mix dry ingredients in bowl.
Dip 1-inch thick drum fillets in melted sweet cream butter and sprinkle with the seasoning mixture, then drop into very hot cast-iron skillet.
Cooking time is only 3 to 4 minutes per side; thinner fillets require less time.
(A tablespoon of butter may be added to skillet just before the seasoned fish to prevent sticking.)
