Rice Con Queso - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1 c. water
    1 (14 oz.) can drained and chopped no-salt tomatoes
    1 c. uncooked long grain rice
    1 (4 oz.) can chopped and drained green chiles
    2 Tbsp. minced fresh cilantro
    1/2 c. (2 oz.) shredded low-fat Jack cheese
Preparation
    Coat a small, nonstick skillet with vegetable cooking spray and place over medium-high heat until hot.
    Add onion and green pepper; saute until tender.
    Transfer to a large saucepan.
    Add water and tomatoes, stirring well; bring to a boil.
    Stir in rice and chiles.
    Bring to a boil.
