Pea Salad - cooking recipe
Ingredients

30 c. peas, drained
3 3/4 c. diced celery
2 1/2 doz. eggs, boiled and diced
4 jars pimentos, drained and diced or 3 3/4 c. red bell peppers, diced
2 medium size sweet onions, diced (Vidalia)
Preparation

Place all ingredients into very large bowl and toss with a vinegar and oil based salad dressing.
Chill before serving. Make 75 servings (1/2-cup per serving).
