Greek Roast Chicken - cooking recipe

Ingredients
    1 large chicken
    1/2 lemon
    1/2 c. butter, softened
    1 c. rice, uncooked
    1 onion, finely chopped
    3 c. chicken stock
    2 1/2 tsp. salt
    1/4 tsp. pepper
    1/2 c. currants
    2 tsp. lemon juice
    1 green pepper, chopped
    2 1/2 Tbsp. plain flour
Preparation
    Rub the chicken inside and out with the cut surface of the lemon.
    Rub outside with two tablespoons softened butter.
    Place on rack in a roasting dish and bake in a 375\u00b0 oven for 1/2 hour per pound.
    Remove chicken and keep warm.
